Easy Dairy-Free Pumpkin Pie

This is a very simple pumpkin pie made without dairy. The coconut milk actually gives it a rich, creamy texture that I think is better than pumpkin pie made with traditional milk.

Baking Tips

Baking in a small kitchen can get complicated, but over the last few years of full-time RV living I’ve learned some tricks that can make it simpler.

  • I buy a pre-made pie crust and don’t have to worry about rolling it out on my tiny counter.
  • I use my Vitamix Blender to mix the ingredients so I don’t need a separate mixer.
  • I have a baking stone in my propane oven to keep the bottom of the pie from burning.

Ingredients

  • 1 – 14oz can of pumpkin (not pie filling)
  • ¾ cup full-fat coconut milk (from a can, not the carton)
  • ½ cup brown sugar
  • ¼ cup cornstarch
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons Pumpkin Pie Spice
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1 – 9” store-bought vegan pie crust
  • Vegan Coconut Whipped Cream

Instructions

  1. Preheat your oven to 350F (180C).
  2. Add the pumpkin, coconut milk, brown sugar, cornstarch, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, and salt to a blender or a large bowl. Mix well.
  3. Pour the pumpkin mixture into the uncooked 9″ pie crust. Use a spatula to spread the pumpkin evenly. For best results let it chill in the refrigerator overnight.
  4. Bake for 60 minutes. Remove it from the oven. The edges might be slightly cracked and the middle will still look wobbly.
  5. Let cool, and then chill in the fridge for a minimum of 4 hours or overnight until set.

Fort Belvoir Campground Review

If you have access to military bases and are looking for a place to stay when visiting the Washington DC area, this campground is for you! From the superb amenities and campsites to the unrivaled location by the Potomac River and the unique exploration opportunities in Accotink Wildlife Refuge; all topped off with easy access to the wonders of Washington DC – this is one camping destination that truly checks all the boxes.

Campground Amenities and Sites

Fort Belvoir Travel Camp offers a myriad of amazing amenities and beautiful campsites that will make your stay a truly unforgettable experience. has 52 large, full hook-up (water, power, sewer) RV sites, each with a picnic table and fire ring. There is also a row of back-in sites overlooking the Potomac River. It is pricey for a military campground at $50 a night, but you have to consider the location.

In addition to the diverse lodging options, recreational facilities such as picnic areas, fire pits, and playgrounds allow you to bond with nature and fellow campers. For those seeking adventure, hiking and biking trails, as well as opportunities for fishing, this campground provides the perfect gateway to exciting outdoor activities.

A Riverside Haven on the Potomac

What truly sets Fort Belvoir Travel Camp apart is its prime riverside location on the Potomac River. This beautiful spot offers campers the opportunity to enjoy breathtaking views of the river and savor the tranquil atmosphere that only riverside locations can provide.

For days you want to relax and enjoy the base, there is plenty to do within walking distance of the campground. This includes a park, dog runs, two fishing piers, and access Accotink Wildlife Refuge hiking trails. Outdoor Recreation offers additional services including firewood, bait, ice, ice cream, equipment rental, hunting, fishing, hiking, biking, and boating. The base also has a brand-new exchange and commissary complex.

Excursions to Washington DC

The cherry on top of all these incredible offerings is Fort Belvoir Travel Camp’s proximity to the nation’s capital, Washington DC. Located a mere 22 miles from downtown DC, and just 7 miles from the Metro (Blue Line) which provides easy and traffic-free access to D.C. Fort Belvoir provides an excellent base for exploring the numerous historical, cultural, and educational attractions that the city is famous for.
